Key Lime Pie

Last week, I made a Key Lime Pie....it was soooo good! It is rich & creamy, almost like a cheese cake. I don't have whip cream on the top here, but you can add it. You can also serve this with fresh strawberries, they taste great with each other.



Key Lime Pie

1/2 c. key lime juice, freshly squeezed
1 (14 oz.) can sweetened condensed milk
1 (8 oz.) pkg. cream cheese, softened
1 (8 oz.) tub Cool Whip whipped topping
1 ready-crust graham cracker pie crust

Cream the cream cheese, add can of condensed milk and whip, whip, whip and whip again. Add half of the cool whip and the lime juice and whip, whip, whip. The more beating, the better the pie. Pour into graham cracker crust and top with remaining cool whip if desired.
Note: You may tint the mixture to a light green color with green food coloring.
You may substitute fresh limes with the bottled lime juice (use the entire bottle of squeeze lime).

My sister Tammy is one of the best cooks I know (she makes the best desserts in the world!). Our nephew Aaron almost always requests her Key Lime Pie when we all get together (that and Macadamia Nut Cookies).

I feel awful that I haven't caught up on your blog....love all of the pictures!
This looks good....but key lime is not a favorite of mine (sorry)...but show a pic of the peach cobbler you'll be making for Bobby and I'll be happy :)
